I have tried for forever a while to get the perfect blondie texture, and I am so happy to finally have achieved it with these Biscoff Blondies! They have the exact texture of a brownie - thick, fudgy, chewy, crispy on the outside and soft on the inside - without the chocolate flavor!
Lotus Biscoff Cookies are a type of crunchy cookie; slightly spiced, slightly sweet, and so delicious. They also sell Biscoff spread at some stores which is a type of cookie butter made from crushed up Biscoff cookies. For maximum deliciousness I used both the spread and the cookies in these blondies. The spread is a bit harder for me to find where I live (I had to order it off of Amazon) so if that is the case for you too you can skip the cookie butter swirls and just use the pieces of cookie. Either way these blondies need to be the next thing you bake!
The ingredients are all simple baking ingredients, plus biscoff cookies of course:
step one: stir together the melted butter, brown sugar, eggs and vanilla until smooth
step two: melt the white chocolate, then add to the butter mixture and stir until completely combined
step three: stir in flour, baking powder and salt until just combined
step four: fold in the crushed cookie pieces, mixture will be very thick
step four: transfer and smooth the biscoff blondies into a lined 9x9 baking pan,
step five: use a teaspoon to drop small amounts of cookie butter on top of blondies and gently swirl into batter with a butter knife, press additional cookie on top if desired
step five: bake until golden and set in the center; allow to cool before slicing into squares
If you can't find Biscoff cookies, or you'd prefer to use something else, you can still make these blondies and simply substitute your favorite cookie in place of the Biscoff ones. Oreo, chocolate chip cookies, or even peanut butter cookies would all taste delicious!
these biscoff blondies stay good in an airtight container at room temperature for 3-4 days after baking; if they last that long!
These Biscoff blondies freeze amazingly well! I use a freezer Ziploc to freeze individual squares, but any airtight freezer safe container will work. Once you're ready to eat them again, simply allow them to sit at room temperature for 20-30 minutes and then enjoy! I like to freeze half the batch so they stay fresh longer

Preheat oven to 350 F, line a 9x9 baking pan with parchment and set aside
In a large bowl, whisk together the brown sugar, butter, eggs and vanilla until smooth
Carefully melt the white chocolate using the microwave or a double boiler, then stir into the sugar mixture until smooth
Stir in the flour, baking powder and salt until just combined; do not over mix
fold in crushed cookie pieces until evenly distributed
Spread the blondie batter into the prepared pan, and add small dollops of cookie butter and swirl through the blondie batter with a butter knife, you can also press in some extra cookie pieces on top if desired
Bake the blondies in preheated oven for 30-35 minutes, or until they are golden and a toothpick inserted into center comes out clean (a few crumbs are fine). Allow to cool before slicing and serving
