I've said it before, and I will say it again, my husband's favorite dessert is cinnamon rolls. Naturally I had to combine this with cookies so we could both be happy! These cookies are soft, delicious, cinnamon spiced cookies that are finished with a perfect drizzle of glaze on top. They are one of my favorite fall cookies to make and share because they're just so cute!
the ingredients are similar to all other cookie recipes:
These cookies may look complicated, but I promise they're not that hard!
step one: stir together the flour, baking powder, cinnamon and salt, set aside
step two: beat the butter and brown sugar until pale and fluffy, about 3 minutes
step three: add the eggs and vanilla and beat again until smooth
step four: add the flour mixture to the butter mixture in 2-3 smaller addition and mix well after each
step five: prepare the cinnamon sugar by mixing together the granulated sugar and cinnamon
step six: divide the dough into two equal portions, then roll each into a 9x6 inch rectangle (should be about 1/4 - 1/2 inch thick
step seven: brush half the melted butters on each of the rolled doughs, then sprinkle each with half the cinnamon sugar
step eight: starting along the longer edge, roll the dough into a spiral, this is the hardest part so take your time and make sure you get a nice swirl in the cookie, you can use a sheet of parchment to help guide the dough
step nine: carefully wrap the dough with saran wrap, then allow the dough to chill in the fridge for at least 2 hours
step ten: slice the dough log into 1/2" slices, keeping the seam side down to help avoid breaking the cookie swirl
step eleven: bake the cookies for 8-10 minutes, or until golden brown, allow to cool completely
step twelve: prepare the glaze by mixing together the powdered sugar and the cream until smooth, drizzle over cooled cookies
The texture of the dough is extremely important for these cookies to work. The dough should be soft, but not sticky. Sticky dough will be too difficult to roll into a log shape, and dough with too much flour will crack and break and not roll nicely. You should be able to press down and make a finger impression in the dough without it sticking to your hands; but it should not crack where you push or look dry

In a large bowl, whisk together the flour, baking powder, cinnamon and salt until uniform; set aside
In a seperate large bowl, beat the butter with brown sugar until light and fluffy, about 2-3 minutes, then add the egg and vanilla and beat again
Add the flour mixture to the butter mixture in 2-3 smaller additions, mixing well after each; set aside
In a small bowl, whisk together the sugar and cinnamon until fully combined, set aside until needed
In a small bowl, stir together the powdered sugar and cream until desired consistency is reached
Divide the dough into two equal portions and roll each into a 9x6 inch rectangle (about 1/4-1/2 inch in thickness)
Spread half the butter on each of the dough rectangles, then sprinkle half the cinnamon sugar on each in an even layer
Carefully roll the dough into a cylinder, starting with the longer edge, to make a cinnamon swirled log, then wrap with plastic wrap and chill in the fridge for at least 2 hours
Preheat oven to 350 F, then slice the chilled dough into 1/2" slices and place onto parchment lined baking sheet, bake for 8-10 minutes or until golden
Allow the cookies to cool 5 minutes on the pan before transferring to a wire rack to cool completely; drizzle the glaze overtop once cooled and allow to dry for at least 4 hours before stacking
