These no bake mini lime tarts are adorable and you only need like 15 minutes and 8 ingredients to make them!! I had some limes laying around the other day - leftover from testing a Chicken Fajita Burger recipe (coming soon!) and I wanted to make a dessert that would be perfect for sharing on Valentine's Day. I poked around the internet a bit for some inspiration and I found a recipe on The Recipe Rebel's website for a no bake key lime pie. This mini lime tart recipe was adapted from hers - which you can find here. Give these a try next time you're craving something tangy and sweet! They are so good!
You only need 8 ingredients to make these cute little tarts:
Step 1: Make your crust by mixing the chocolate cookie crumbs, butter, and sugar together until completely combined. Warm, melted butter is ideal to help melt te sugar. Once combined, the texture should resemble wet sand and you should be able to pinch it between your fingers and have it remain together.
Step 2: Pat the crust down into the tart shells firmly. I usually start out using my hands, then I use the back of a measuring spoon to really pack it down
Step 3: Make the filling by beating the cream cheese until smooth, then beating in the condensed milk and sour cream until light and fluffy - about 3-4 minutes. Then stir in the lime juice and zest. I recommend tasting the filling at this point to decide if you are happy with the amount of lime zest.
Step 4: Pour the tart filling into the prepared tart shells, and then refrigerate until it sets, about 2-3 hours. Garnish with a quarter slice of lime or additional lime zest to make it fancier!
I find limes to be more readily available in my local store than key limes. They are also available to buy individually as opposed to a large sack.I also think they taste just as good! For these reasons I used plain, regular, limes. If you prefer Key limes you can substitute.
Absolutely! You can use whatever type of crust you'd like! I love the look and taste of the chocolate in these tarts, but graham crumb, or any other plain biscuit crumb would be delicious as well.
Yes - if you only have Oreo cookies in your cupboard then go ahead and use them! You can use a food processor to grind the cookies into crumbs. Keep the icing in the cookies and then you can skip the brown sugar in the recipe.
The tart pans that I used to make these lime tarts, while adorable, are very specific and you may not happen to just have one laying around. If that is the case, you can make these in a muffin tin! Use muffin liners so they are easy to remove from the tray and serve. You can also use an 8" spring form pan to make a larger size, or a larger tart pan if you have one of those. Mini muffin size would be SO adorable as well!
