Sometimes we need a good, easy, healthy salad to get help us through the week. Lentil Feta Salad checks all those boxes. I first found the idea of a lentil salad in an old vegetarian cookbook about 5 years ago. Since then, I have put my own spin on it and ended up with this. Sometimes I even change it up a bit to add some different veggies, depending on what I have in my fridge!
The most important ingredient is of course lentils, after that it is up to you what veggies to add. Here is my favorite way to make and serve this salad:
It really couldn't be easier to make this salad:
step one: put all salad ingredients in bowl and mix
step two: drizzle balsamic glaze and oil over top and toss to coat
This salad stays good in the fridge in an airtight container for 3-4 days. I like to make it at the beginning of the week and then serve with lunches/dinners throughout the week for an easy, healthy, filing side. This salad doesn't freeze well.
I like to use lots of different things in this salad, other than my usual pepper, cucumber, tomato mix including:

In a large bowl, combine lentils, bell pepper, cucumber, tomato, feta, craisins, and sunflower seeds
Drizzle balsamic glaze and olive oil over salad, stir until salad is thoroughly coated

Wednesday April 12, 2023Have made a similar recipe but mine has craisins, sunflower seeds and pumpkin seeds plus I do add a couple of crushed garlic cloves to my balsamic vinegar ( not balsamic glaze ) and olive oil dressing..then add fresh crushed black pepper.....so very good...make it often.
