Ingredients

  • 3 cups flour
  • 2 teaspoons ground ginger
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup butter, softened
  • 1 cup brown sugar, lightly packed
  • 1/4 cup granulated sugar
  • 2 eggs, slightly beaten
  • 1/3 cup molasses
  • 1 teaspoon vanilla extract
  • 1/2 cup granulated sugar (for rolling)
  • 1 teaspoon cinnamon (for rolling)

Directions

Preheat oven to 375 F and line a baking sheet with parchment paper; set aside

In a medium bowl, stir together flour, ginger, cinnamon, nutmeg, baking soda and salt, set aside

In a large bowl, cream together butter, brown sugar, and granulated sugar until light and fluffy

Beat in eggs, molasses, and vanilla until thoroughly combined

Add flour mixture to butter mixture in several smaller additions, mixing well after each

in a small bowl, mix granulated sugar and cinnamon, then form dough into ping pong sized balls and roll in cinnamon sugar

Place sugared dough balls on prepared baking sheet 1 inch apart, then bake for 8-10 minutes, or until cookies are just starting to brown on the top
