You are going to love this new recipe I am sharing today! No, it's not a cookie or other baked good - like I have been sharing as of late - it's chicken and broccoli fritters with cheese! These chicken mince patties bursting with broccoli and cheese are a new favorite of mine and it's not hard to see why.

What are chicken fritters?

While fritters typically refer to fruit, vegetables, or meat that has been battered and deep fried, these broccoli chicken fritters with cheese are made using minced chicken and an egg to hold everything together, then fried in a regular frying pan with just enough oil to stop them from sticking. They're still delicious!

What are the ingredients in broccoli chicken fritters?

The ingredients are simple, every day things and can easily be customized to suit your tastes:

  • onion - for moisture and flavor in the patties
  • garlic - because garlic is delicious
  • broccoli - the veggie in these fritters is broccoli, but you can also try shredded carrot, corn, shredded zucchini or spinach
  • ground chicken - you definitely want to use a ground meat in this recipe because it helps everything stick together but you could easily swap for minced turkey instead if you prefer
  • egg - helps hold everything together
  • fresh herbs - I like a blend of rosemary and oregano but thyme, basil and dill would also be delicious. If you don't have any fresh herbs you can use about a teaspoon of Italian seasoning or the dried variety of any of the herbs mentioned above
  • cheese - fresh shredded works best in this case; I like to use a blend of old white cheddar cheese and parmesan, but feel free to substitute with your favorite cheese(s)

How to make cheesy chicken fritters?

The process to make these delicious broccoli chicken patties is very easy:

Step 1: heat oil in large frying pan over medium heat, then add onion and garlic, stirring frequently until onion is starting to soften. Add the broccoli and cook until tender. Remove from heat and allow to cool

Step 2: While the broccoli mixture is cooling, shred the cheese, mince the herbs, and mix in with the ground chicken along with an egg. Once the broccoli mixture is cool enough to handle, add it to the chicken mixture and mix well

Step 3: Divide the chicken mixture into 6 even portions, and flatten each into a patty shape (these are large enough to be eaten on a burger bun, so if you;d like more of a nugget size, make 12 even portions!).

Step 4: Cook patties in a pan over medium heat with a generous amount of oil (to prevent sticking) for about 5-8 minutes each side, or until chicken is cooked through and an internal temperature of at least 165 F is reached.

Tips and tricks to make the best cheesy chicken fritters:

  • make sure you have thoroughly cooked the broccoli before adding it to the chicken mixture - otherwise it will be crunchy in the patties
  • you can use frozen broccoli or blanched broccoli to save some cooking time
  • if you skip pre-cooking the onion and garlic, make sure you cut it really fine and expect that it will have a stronger taste
  • try to only flip the fritters once in the pan, and never squish them down to help them cook - the cheese and juices will escape more readily
  • make sure you mince the rosemary very well before adding it to the chicken mixture - full rosemary leaves can be a bit tough sometimes
  • make sure the pan and oil inside is nice and hot before starting to cook the fritters, you want to make a bit of a sear on the outside
  • do not crowd the pan - cook in batches if you have to and store the finished patties in the oven at about 200 F while you finish cooking the rest

What to serve with broccoli and chicken fritters?

What you serve with the broccoli and chicken fritters depends on what type of meal you're going to use them in. We love to eat them with a side of veggies and garlic dill twice baked potatoes, or on a bun with french fries, or even just served with a salad!

Ingredients

  • 2 tablespoons olive oil, divided
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 head broccoli, minced (about 2 cups minced broccoli)
  • 1 lb ground chicken
  • 1 large egg
  • 1/2 teaspoon fresh minced rosemary
  • 1 tablespoon fresh minched oregano
  • 1 cup fresh shredded cheddar cheese
  • 1/4 cup fresh shredded parmesan
  • salt and pepper to taste

Directions

Heat 1 tablespoon of oil in large frying pan over medium heat, then add onion and garlic, stirring frequently until onion is starting to soften.

Add the broccoli and cook until tender. Remove from heat and allow to cool until it can be comfortably handled

In a large bowl, combine the chicken, egg, rosemary, oregano, cheddar and parmesan cheeses, and salt and pepper, then add the cooled broccoli mixture and mix until a uniform consistency is reached

Shape the chicken mixture into 6 equal patties, then cook in the remaining one tablespoon of oil over medium heat until cooked through, about 5-8 minutes per side (until they are at least 165 F in the center and the juices run clear)
