So what are the secret veggies in these meatballs? Shredded zucchini and carrot; they are healthy without lending any noticeable veggie flavor. The other secret I have to share about meatballs is the cooking method. I always cook my meatballs right in the sauce. Its so easy, keeps them moist, and actually flavors the sauce really nicely! I normally make these when I make a big batch of my homemade sauce but if you're using jarred sauce you'll likely have to cook the meatballs in batches as it is important they all get completely covered. If you're not planning on serving with a tomato sauce then these can easily be pan fried or baked, but I think these are best served over a big pile of noodles with some homemade tomato sauce!

Spaghetti and meatballs is a classic dish that I don't think I'll ever get tired of. However, in an effort to eat more veggies, I have come up with this healthier alternative to the classic beef meatball. Super soft and moist, these little turkey bites are everything you could want in a meatball. They're also melt in your mouth tender and juicy because all the veggies inside. Win-win!

Prep Time: 10 Minutes
Cook Time: 20 Minutes
Total Time: 30 Minutes

Ingredients

  • 1 lb ground turkey
  • 1 medium zucchini, grated
  • 1 medium carrot, grated
  • 1 egg, slightly beaten
  • 1 cup italian flavored breadcrumbs
  • 1 teaspoon italian spice
  • 1/2 teaspoon basil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion flakes
  • salt and pepper to taste (I usually do a small pinch of each)

Directions

In a large bowl, mix turkey, zucchini, carrot, egg, breadcrumbs, italian spice, basil, garlic powder, onion flakes, salt and pepper until completely combined

Shape meatballs into golf-ball sized spheres, and place as many as will fit into tomato sauce (it is important that the meatballs are all completely covered in sauce and not too close together)

Bring sauce to a boil, then turn down and allo to simmer for about 20 minutes, or until meatballs are cooked through (You may need to repeat steps 2&3 a couple times if you have a small amount of tomato sauce)

Serve over noodles
