The recipe makes 12 muffins, and they stay good in a sealed container for several days on the counter. These muffins also freeze amazingly. Cooked muffins can be frozen in a freezer bag for several months. When you're ready to eat them, either pop them into the microwave about 20-30 seconds, or thaw on the counter for 1-2 hours.
Made from basic pantry ingredients and fridge staples, you probably have most, if not all, the things you need to make these in your house right now. I usually use Gala apples but the recipe works with whatever apple you prefer! The method to make these muffins is really simple. first, you whisk together all the dry ingredients, then you whisk together the wet ingredients, pour the wet onto the dry and stir. Once your batter has formed, throw in the apples, bake, glaze, then devour! Speaking of glaze - it is a maple cinnamon icing that hardens into a delicious coating on to top of the muffin - you don't want to skip it! It lends the perfect sweetness that really kicks these muffins up to the next level. I drizzled mine on top, but you can also spread it on with the back of a spoon to get a more even layer.
It's official - I can't wait any longer to start my fall baking! Although I love summer weather the best, nothing compares to fall flavors - especially cinnamon. Bursting with chunks of apple and a perfect balance of sweet and spiced, these muffins are some of the best you'll ever have. My husband rated them a solid 11/10 - they're that good. Now that apple season is around the corner, you really have no choice but to add these to your baking list.

Preheat oven to 425 F, grease or line a 12 muffin tin
In a large bowl, whisk together flour, brown sugar, white sugar, baking powder, cinnamon, baking soda, salt; set aside
In a medium bowl, beat together oil, eggs, applesauce, milk, and vanilla
Pour the wet ingredients into the dry, and stir until no lumps remain
Mix in the diced apples, evenly divide batter into the 12 prepared muffin tins.
Bake in preheated oven for 5 minutes, then turn oven down to 350 F and continue baking an additional 10-12 minutes, or until a toothpick inserted comes out clean, cool 5 minutes in pan then transfer to wire rack to finish cooling
While muffins are cooling, prepare the glaze by stirring together the icing sugar, cinnamon, and maple syrup. Add the cream until glaze is spreadable consistency
Drizzle glaze onto cooled muffins
