I love a good classic burrito bowl, but sometimes I need a shortcut and that is why I love this casserole so much! This uses just a handful of kitchen and pantry staples you probably already have! Everything is baked in the same dish, and it is so easy to customize it to suit your tastes. Healthy doesn't have to be boring; it doesn't get much tastier than this!

What are the ingredients in black bean burrito bowl casserole?

Only 6 ingredients needed for the casserole, plus whatever else you have on hand for the toppings:

  • brown rice - you can substitute with white if you prefer, but brown is healthier and in this type of dish doesn't make a huge difference taste-wise
  • chopped bell pepper - I used two bell peppers
  • frozen corn - I like corn for the added sweetness
  • black beans - I use a can of black beans
  • canned chili tomatoes - I like this flavor for the spices but you can use your favorite flavor of canned tomatoes
  • shredded cheddar cheese - forms into a melted delicious layer on top of everything
  • toppings - sour cream, cilantro/parsley, avocado, jalepeno, lettuce, ranch, taco sauce etc.

How to make this black bean burrito casserole?

It couldn't be simpler to make:

step one: put cooked rice in the bottom of a 9x13 casserole dish

step two: place the peppers, corn, beans and tomatoes on top of the rice

step three: top with cheese

step four: cover with foil and bake for 50 minutes, then remove foil and continue baking an additional 10 minutes

What makes this casserole so good?

  • it has lots of flavor from the chili tomatoes
  • you can top it with your favorite toppings and sauce (I like spicy ranch or taco sauce)
  • you can easily adjust the toppings to suit your tastes
  • you can make it up the night before and then pop it in the oven when you are ready to bake

What toppings are best for this casserole:

While this casserole can be eaten as-is I always like to throw a few extras are on top once it is done. I like to add a bit of lettuce for crunch, some avocado for creaminess, and some spicy ranch, or taco sauce. You can also add jalepeno, sour cream, or anything else you would usually add to your burritos.

Ingredients

  • 5 cups cooked brown rice (2 cups raw)
  • 2 bell peppers, chopped
  • 2 cups frozen corn
  • 1 can black beans, rinsed and drained
  • 1 can chili flavored tomatoes
  • 2 cups cheddar cheese
  • sour cream, cilantro, lime, jalepeno, taco sauce, ranch, lettuce, avocado etc. for serving

Prepare The Oven

Preheat oven to 400 F

In a 9x13 casserole dish, add rice, followed by peppers, corn, beans, tomatoes, finishing off with the cheese

Cover with foil, bake for 60 minutes, or until cheese is bubbling, removing the foil for the final 10 minutes of baking
