I am the queen of forgetting to thaw meat in time for dinner. I used to be way better at meal planning, but lately I have been slacking a bit when it comes to our weekly menu. There have been too many nights recently where my family asks what is for dinner at 5 pm and I haven't got a clue! Luckily, I have quite a few recipes in my repertoire that do not require much planning, and I usually have the ingredients for (or close enough)! This one pot meal is great for when you need to throw something together that is both satisfying and tasty, and uses up what you have in your fridge/pantry.

What does this dish taste like?

This dish uses Mexican inspired flavors to create a healthy and filling slightly spiced rice dish with vegetables, black beans and of course a healthy layer of cheese on top! Everything cooks in one pot so not only is it easy with minimal clean up, the rice absorbs all the delicious flavors from the broth and veggies!

What are the ingredients needed to make this Mexican style rice?

The ingredients look like a lot, but they are either basic pantry staples or can easily be swapped out for what you have in your house:

  • oil - for frying the veggies
  • onions and garlic - provide a nice flavor to the meal
  • veggies - I used a blend of peppers, sweet potato, corn, and spinach
  • black beans - the protein of the dish, be sure to rinse well
  • rice - i use my favorite basmati rice but any variety of white rice will work
  • broth - the cooking liquid for the rice
  • diced tomatoes - use a flavored can of petit cut tomatoes
  • limes - to really kick up the flavor
  • seasonings - the blend of chili powder, cumin, oregano, paprika and salt work well with the veggies and rice
  • cheese - optional, but delicious
  • cilantro or parsely - as a garnish and subtle flavor boost

How to make this one pot meal?

step one: fry the onion, peppers, and sweet potato in oil in a large skillet

step two: add the garlic and seasonings and cook an additional 2-3 minutes

step three: add the black beans, corn, and rice and stir to coat

step four: add the broth and tomatoes, stir and bring to a simmer

step four: cover and cook until the rice is cooked and the liquid has been absorbed

step five: stir in the spinach and lime juice

step six: top with cheese, cover and allow cheese to to melt; sprinkle with chopped parsely and serve immediately

Can I use brown rice in this dish?

I do not recommend using brown rice, the cook time is way longer than white rice and it would need additional liquid to cook properly

Can I use leftover pre-cooked rice?

This recipe is great for uncooked rice, there is too much liquid in the recipe to use cooked rice.

Is this dish healthy?

Exactly as written this dish is healthy while not skimping on flavor. It has lots of veggies and beans that add to the nutritional value of this meal. If you are looking to make it even healthier you could consider adding only hafl the amount of cheese!

Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 bell peppers, diced
  • 1 medium sweet potato, peeled and diced
  • 3 cloves garlic, minced
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt (or to taste)
  • 2 cups white rice
  • 1 can black beans, rinsed and drained
  • 1 cup corn (frozen, thawed or canned)
  • 3 cups broth
  • 1 28 oz. can diced tomatoes (undrained)
  • 2 cups spinach
  • juice from one lime
  • 1 1/2 cups shredded cheddar cheese
  • parsley/cilantro/lime wedges for serving

Directions

Fry The Vegetables

In a large skillet over medium heat, fry the onions, peppers, and sweet potato until the onion turns translucent, about 5 minutes.

Add The Seasonings

Add the garlic, chili powder, cumin, oregano, paprika, and salt and cook an additional minute

Add The Rice And Beans

add the rice, beans, and corn and cook until the rice starts to turn translucent, about 2-3 minutes

Cook The Rice

stir in the broth and canned tomatoes, then bring to a boil. turn the heat down, cover, and allow to simmer for 12-15 minutes, or until most of the liquid is absorbed and the rice is cooked.

Add The Spinach

remove from heat, stir in the spinach and lime juice (the heat from the rice will cook the spinach)

Add The Cheese

sprinkle the cheese, cover the pan and allow to melt, then top with chopped parsley and cilantro, and extra lime wedges before serving
