The simple lemon added for a citrus flavor really brings out the earthy sweetness of the beets and complements the soft and smooth texture. This citrus-roasted beet recipe uses simple ingredients and is so easy to make!

step one: Preheat the oven to 425 F, line a baking sheet with aluminum foil, and set aside.
step two: Toss the beet pieces with oil, lemon juice, brown sugar, salt, and pepper.
step three: Spread out onto a baking sheet and roast in the oven for 20 minutes, stirring halfway
through, or until beets are easily pierced with a fork.
There is no need to worry about peeling them at all, before or after they cook. This is because the beet skin is completely edible and soft to chew right through. Just one part of why these crispy roasted beets are so simple to make! I usually peel them, but you can save yourself some prep time and use unpeeled beets. If you choose to leave the skin on, make sure you scrub really really well. I like to also slice off where the stems come out, since there are lots of crevices there that could trap dirt
