Beets might not be the most exciting root vegetables, but this citrus-roasted beet recipe showcases what I love the most about them! The simple lemon added for a citrus flavor really brings out the earthy sweetness of the beets and complements the soft and smooth texture. This citrus-roasted beet recipe uses simple ingredients and is so easy to make!

What Are The Ingredients Needed For These Citrus Roasted Beets?

You don’t need a lot of ingredients to make this simple recipe - only 6 ingredients:

  • beets - the star of the show! You need about two pounds cut into bite-sized pieces.
  • olive oil - to help the beets cook nicely in the oven
  • lemon - You only need half a lemon juiced, so save the rest of the lemon for something like my Lemon Pudding Cookies, or to drizzle overtop of the beets after they finish cooking
  • brown sugar - this will help bring out the natural sweetness in beets!
  • seasonings - salt and pepper to bring out the flavor

How To Make This Dish?

This roasted beet recipe is such a simple side dish!

step one: Preheat the oven to 425 F, line a baking sheet with aluminum foil, and set aside.

step two: Toss the beet pieces with oil, lemon juice, brown sugar, salt, and pepper.

step three: Spread out onto a baking sheet and roast in the oven for 20 minutes, stirring halfway
through, or until beets are easily pierced with a fork.

Is it better to peel beets before or after roasting?

There is no need to worry about peeling them at all, before or after they cook. This is because the beet skin is completely edible and soft to chew right through. Just one part of why these crispy roasted beets are so simple to make! I usually peel them, but you can save yourself some prep time and use unpeeled beets. If you choose to leave the skin on, make sure you scrub really really well. I like to also slice off where the stems come out, since there are lots of crevices there that could trap dirt

Should beets be boiled before roasting?

For these roasted beets with citrus flavor, there is no need to boil them before cooking them. Just be sure to cut them into similar bite-sized pieces so that they cook evenly in the oven.

Do I need to poke holes in beets before roasting?

Not necessary! Since you are going to be cutting these lemon-roasted beets into pieces before cooking them, that allows for the hot air during the roasting process to go in and out of the beets easily enough.

How do you know when roasted beets are done?

The last thing that you want to do is to over or undercook your beets! The best way to tell if the beets are done cooking is to pierce the pieces with a fork. If the fork enters easily, the beets are done cooking and ready to remove from the oven.

Do you eat the skin on roasted beets?

Yes, you can! This is why making beets is such a great dish! You don’t have to take off the skin at all - and can just wash and prep them to cook just as they are.

Can you overcook beets?

Just like any type of ingredient or food, it’s important to pay attention to the cooking time of the beets. If you cook them for too long in the oven, you will overcook them and the sugars will burn. make sure to stir them at the halfway point, and watch them closely at the end of the cooking time.

Do you wash beets before cooking?

Before cooking any type of fruit or vegetable, make sure that you clean it well. REgardless of whether you will be peeling them it is always a good idea to wash beets - be sure to dry off any excess water that is remaining on the beets so that you can coat them with the oil and they will roast perfectly in the oven.
