After the holidays, one of the most difficult parts is using up all those leftovers! While I do love a good ham dinner, I find myself getting sick of the same sliced-up ham time and time again. There are only so many ways you can convince your family to eat ham before they’re just plain sick of it! This creamy ham and white bean soup is the perfect fix! This soup recipe will please even the pickiest eater in your family.
This might look like it calls for many ingredients, but as you can see, this easy ham and white bean soup recipe uses a lot of kitchen staples you have on hand:
This easy soup recipe is so simple to make!
step one: In a large stockpot, fully melt the butter, then add the onion, celery, and carrots. Cook while frequently stirring until the onion is translucent and the vegetables are softened.
step two: Sprinkle the flour over the vegetable and stir to coat
step three: Slowly add the chicken broth and mix well after each to avoid lumps
step four: Add in the corn, potatoes, cannellini beans, and ham, and bring to a boil
step five: Allow to cook until all vegetables are tender, about 15 minutes
step six: Stir in the heavy cream and cheddar cheese until melted and smooth. Season with salt and pepper if desired
step seven: Serve immediately with fresh chopped parsley and additional cheddar cheese if
desired
Quick ham and bean white soup is thickened by the flour addition at the beginning of the recipe. You can thicken more by adding additional flour or cornstarch mixed into a slurry with the soup broth. Mix the two together, and then pour them into the soup and allow to simmer for a couple minutes.
I like this type of soup to have a thicker texture. If you prefer a thinner soup, you can easily add more broth to make that happen.
Absolutely. If you cook the soup for too long, the beans will become mushy and potentially even lose their shape. If this happens, this is the biggest indicator that the beans have been overcooked. Cut the potatoes vegetables into bite sized pieces so they don't take too long to soften and therefore cause mushy beans. If you absolutely love big vegetables in your soup then stir the beans in in the last 10 minutes of cook time to ensure they don't go mushy.
For this recipe, rinsing and draining the beans is what is recommended, the canned beans come packed in a liquid that would not be a good addition to the soup.
If you follow the reicpe as written it shoudl be very flavorful, however you can always boost the flavor by stirring in salt or other seasonings to enhance the taste. The other option would be to add a bit of lemon or lime juice to see if the acidity would be a good pairing of flavor. Whatever you add, just be sure to stir well and taste test before adding more.
